Instructions
Step 1: Preheat & Prepare
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray.
Step 2: Make the Sweet & Tangy Sauce
In a medium bowl, whisk together ketchup and barbecue sauce until smooth. Reserve ½ cup for glazing later.
Step 3: Mix the Meatloaf
In a large bowl, combine ground beef, crushed crackers, onion soup mix, eggs, ½ cup of the ketchup-barbecue mixture, salt, pepper, garlic powder, and onion powder. Mix gently until just combined—avoid overmixing to keep it tender.
Step 4: Form & Glaze the Meatloaf Layer
Press the meat mixture evenly into the prepared baking dish. Spread the remaining ½ cup of sauce evenly on top.
Step 5: Bake the Meatloaf
Bake for 30 minutes until partially cooked and the top begins to set.
Step 6: Cook the Macaroni
Meanwhile, cook the macaroni noodles according to package directions. Drain well and set aside.
Step 7: Make the Cheesy Mac & Cheese Mixture
In a large bowl, whisk together milk and condensed cheddar cheese soup until smooth. Stir in the cooked noodles, 2 cups of shredded cheese blend, and season to taste.
Step 8: Assemble the Casserole
After the meatloaf layer has baked, carefully spoon the mac and cheese mixture over the top. Spread evenly to cover the surface.
Step 9: Add Cheese & Finish Baking
Sprinkle the remaining 2 cups of shredded cheese evenly over the top. Return to the oven and bake for 17–20 minutes, or until the cheese is melted, bubbly, and lightly golden.
Step 10: Rest & Serve
Allow the casserole to cool for about 10 minutes before slicing. Serve warm and enjoy the perfect balance of savory meatloaf and creamy mac and cheese.
Chef’s Tips
- Choose the Right Cheese: A blend of sharp cheddar and mozzarella melts beautifully and adds depth of flavor.
- Add a Touch of Heat: Mix in a pinch of smoked paprika or chili flakes for a mild kick.
- Make Ahead: Assemble the casserole up to a day ahead, refrigerate, and bake just before serving.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
